II. DESCRIPTION OF THE
PLANTS.-

Maca (Lepidium
Meyenii):
Native to Peru, Maca grows in the Peruvian
Andes. It can only grow in heights above 3800
meters (12,700 ft) above sea level, especially
in the Pampas of Junin. It develops in a cold
environment, with strong winds and high solar
radiation. Found in steppes and mountain
cliffs, in soils rich in minerals.
It belongs to the Crucifer family. It is an
herbaceous plant of approximately 30cm (12 in)
height; its leaves are green and grow in the
upper part of the tuber. Maca has a tuber that
ranges in color from yellowish to light purple,
violet to black. It is very similar in shape to
a turnip, from 1 to 3 cm. in length and 1 to 5
cm in diameter. Maca is a food staple of high
nutritional and biological value: it contains a
high level of essential minerals, specially
calcium, magnesium, phosphorous, zinc, copper,
iron, vitamin B complex and vitamin C.

Sage (Salvia
Officinalis L.):
Sage is a perennial, aromatic plant that reaches
up to 70cm (2ft 4in) in height. Belongs to the
Lamiaceae family. It has a tall, erect, downy
stalk; petiolate leaves, elongated, oval, with
the veins well defined. The flowers are blue
violet, sometimes white or pink, growing in
ears. Grows in dry, arid soils, close to
maritime coasts. The parts used are the leaves
and dry flower bunches.

in Peru along the coast, highlands (up to 3,500
meters -11,600 feet- above sea level) and in the
Amazon basin. Rosemary can be cultivated without
problems in topical, subtropical and humid
climates, and in diverse types of soil.

calcium, phosphorous, potassium, magnesium and
sulfur among others.

This is a tree from the fabaceae family. Reaches
15m (50ft) in height and has perennial leaves.

thick. Its leaves are dark green and its flowers
are small and red. Its fruit is a thick pod, a
dark green-brown tone, 4 to 12 in in length,
containing a sticky pulp sweet and pleasant to
the taste. The seeds are in the pulp. The pods
are edible and are used as fodder.
The carob tree is a major source of nitrogen to
arid soils. The diverse components of its fruit
have nutritional and medicinal properties. It
has many amino acids, vitamins (principally C
and E) and minerals (Potassium). It also is rich
in carbohydrates, has a high level of glucose
(saccharine), tannins, pectins and others.

Properties:

Used against diarrhea
(dry carob flour) and other gastric
discomforts. It absorbs toxins from the
digestive system. Excellent against infant
diarrhea; and used as treatment of
gastroenteritis of lactating babies.

The apple tree belongs to the Rosaceae family.

green to yellow to red and color mixes. Flavor,
aroma and quality are different with each
variety. The pulp can be hard or soft, but
always refreshing and juicy. Its aroma also

sweet to the acidic, and any combination in
between.

grain, with 16.2% compared to rice, 7.5% and
wheat 14%. Its protein is of high quality,

It is a member of the Euphorbiaceae family. This
perennial shrub grows in the humid tropics,

fodder). The flowers grow in the top of the
stalk and their color varies from purple to
yellow. The plant is monoic, with both male and

animal food, both fresh and processed. Products
derived from the Yucca are: Roots, fresh and
cooked and fried in diverse ways. Dehydrated,

products, soup bases, additives to processed
meats, pastas, sauces, bases for juices, and
other derived options. Yucca is a meal rich in
carbohydrates and fiber compared to cereals and
it has a high level of starch. It has 18
